Those of you who know me appreciate how much I love a good #breakfastcheat. Well, these coconut vanilla protein crepes are now at the very top of my list. Seriously, though - it doesn't get much better than thousands of flavors exploding in your mouth all at once PLUS knowing that you're getting a great protein kick! Let me know what you think after trying these sinfully delicious nom noms.
Ingredients
For the Crepe Mix:
4 egg whites
1/2 cup of instant oats
1 banana
1 scoop of whey vanilla protein powder
1/2 teaspoon of vanilla extract
For the Filling:
1 cup of nonfat Greek yogurt
2 tablespoons of natural peanut butter
1/2 teaspoon of ground cinnamon
1/2 teaspoon of vanilla extract
1 tablespoon of honey
Directions
1. Dump all the crepe ingredients into a blender and blend for 30 seconds. If you find that the mixture's too thick, add a tiny bit of water (1 tablespoon or less) and keep stirring until it reaches a smooth batter.
2. Preheat a pan on medium high heat and cook the crepes in coconut oil for 20-30 seconds on each side.
3. Stuff the crepes with the yogurt filling. For some extra ooey gooey awesomeness, drizzle a tad of honey over the top.
