- 1/2 cup mashed sweet potato (the equivalent of one medium sized sweet potato)
- 2 eggs
- Whisk together the sweet potato and eggs until well combined. Add any seasonings you may want and stir. We recommend using a dash of cinnamon or nutmeg to sweeten them up a bit!
- Drop the sweet potato mixture by the spoonful onto a well greased skillet and wait for about 4 minutes before flipping.
- Flip each pancake and cook for an additional 4 minutes or until golden brown on the outside. They’re sweet enough to enjoy on their own but a little bit of nut butter on the top goes a long way!
TIP: Cook on low heat for more flavor and to be able to cut them with your fork!
