SUPER STUFFED CHICKEN

Ingredients

  • 1 tbsp olive oil
  • 3 pieces of boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • ½ cup sun-dried tomato
  • 6  slices mozzarella cheese
  • 1 cup spinach

INSTRUCTIONS

  1. Preheat oven to 350F and cut a pocket into each chicken breast, being careful to not cut all the way through.
  2. Season the chicken thoroughly (inside and out) with salt and pepper.
  3. Stuff each chicken breast with chopped sun-dried tomato, cheese, and spinach and seal with toothpicks.
  4. Heat olive oil in a cast iron skillet and sear chicken it for about 2 minutes or until the chicken is a nice golden brown.
  5. After it’s seared, place the whole cast iron skillet in the oven for 20 minutes, or until the chicken is thoroughly done. Enjoy with a spinach salad for a delicious, low carb meal!
