SPINACH ARTICHOKE PASTA

Ingredients

  • 1 pack wheat pasta noodles
  • 1/2 container plain hummus
  • 2 cups artichoke hearts, roughly chopped
  • 1 1/2 cups spinach
  • 1 large garlic clove, minced
  • 1/4 tsp. Mrs. Dash seasoning
  • Red pepper flakes (optional, for topping)
  • Parmesan cheese for topping

INSTRUCTIONS

  1. Cook pasta according to package instructions.
  2. In the meantime, mix together the hummus, artichoke hearts, spinach, garlic, and Mrs. Dash, in a large bowl and combine well. Add a few tablespoons of water into mixture to give it a thick and creamy texture.
  3. Once the pasta is done cooking and is drained, immediately combine with the hummus mixture.
  4. Toss together until pasta is well coated, adding a tablespoon or two of water if needed.
  5. Serve with red pepper flakes and parmesan cheese on top and enjoy!
