SKINNY QUESO DIP RECIPE

👉Sauce Ingredients:

2 tablespoons of unsalted butter
1 clove of minced garlic
1 diced jalapeno
2 tablespoons all-purpose flour
2 cups of coconut milk
2-3 cups of shredded cheddar
1 teaspoons of chili powder
1/2 teaspoon of mixed spiced (optional)
dash of kosher salt
1/4 cup of greek yogurt

Garnish options:
avocado
cilantro

Chips:
Simply Balanced Organic Corn Chips
Simply Balanced Organic Blue Chips

👉Directions:

In pan melt butter over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute. Stir in tomato until softened, about 1-2 minutes.

Mix in flour and coconut milk until browned. Continue to mix constantly, until it begins to thicken. (Approx 6 min).

Stir in cheese 1 cup at a time. Mix each cup for about 1 minute. Stir in chili powder and cumin; season with salt and pepper, to taste. Stir in Greek yogurt until well combined, about 1 minute.

Cook for another 3-5 minutes or until the sauce is thickened & voila! Serve with whole grain chips!
