NOT YO’ MAMA’S CHICKEN SALAD

Ingredients

  • 1 lb. cooked, shredded chicken breast
  • 1 large green apple, finely chopped
  • 1/4 cup red onion, diced
  • 2 large celery stalks, diced
  • 1/3 cup dried cranberries
  • 1/2 cup nonfat Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Throw them on some lettuce wraps for some easy-to-snack flare


INSTRUCTIONS

  1. Combine shredded chicken, green apple, red onion, celery, and dried cranberries into a large bowl and set aside.
  2. For the sauce, mix the Greek yogurt, lemon juice, honey, garlic powder, salt, and pepper.
  3. Pour the sauce over the shredded chicken mixture and mix until all ingredients are incorporated.
  4. Enjoy on a wheat tortilla or with crackers for more of a snack!

TIP: This high protein meal will keep for five days in the fridge!
