Best time to eat
This lean meal is a perfect compliment to any fat loss RE Fitness custom meal plan - this complex carb source is low calories and the perfect side for any meat source or high protein meal. Keep your friends close, but your carbs closer.
- 2 lbs red potatoes, washed and cut into cubes
- 2 tablespoons basil pesto spread
- Salt and black pepper, to taste
- 3 tablespoons grated fresh parmesan cheese
- Preheat oven to 400 degrees F.
- In a large bowl, combine potatoes and pesto. Once potatoes are thoroughly coated, place on a large baking sheet. Season with salt and pepper and roast for 20 minutes.
- Remove potatoes from oven and sprinkle parmesan cheese over them. Roast for an additional 10 minutes or until potatoes are crispy. Remove from the oven and serve warm as the perfect side to a salmon or chicken dish.
