Lately I've received a ton of comments from folks wanting to know how they should eat their coconut oil. Generally I'm not one to mess around - I usually just grab a tablespoon and pop it right down the hatch. But for those of you who can't stomach the idea of plain coconut oil, here's a sinfully delicious alternative. I don't suggest doing this on the daily, but every now and then a little chocolate never hurt nobody! ;)
INGREDIENTS
½ cup of melted coconut oil
¼ cup of honey or maple syrup
½ cup of unsweetened cocoa powder
¼ tsp. of vanilla extract
Pinch of salt
Unsweetened shredded coconut (to garnish)
DIRECTIONS
1. Line a small square dish with parchment paper and set aside.
2. In a separate bowl, blend the coconut oil, maple syrup or honey, cocoa powder, salt, and vanilla. Whisk until very smooth.
3. Pour the mixture into your prepared dish and refrigerate for about an hour, or until solid. (If you're rushed, pop the dish into the freezer and it'll be good to go in about 30 minutes - although you might need to use a heated knife to slice through it!) 4. Sprinkle the shredded coconut on top and slice into 9 small pieces. Enjoy!
