CHOCOLATE PROTEIN COOKIES

Ingredients

  • 1 cup¬†all-natural smooth peanut butter
  • 1/2 cup¬†coconut palm sugar
  • 1/2 cup¬†chocolate whey or vegan protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 2¬†large eggs
  • 1/3 cup mini chocolate chips


INSTRUCTIONS

  1. Preheat oven to 350¬ļF and prepare a baking sheet.
  2. Place all ingredients in a medium-sized bowl and mix well. The consistency should be thick and not crumbly. If it is, add a tablespoon or two of coconut oil to thicken it up.
  3. Spoon out the dough and press onto pan until somewhat flat.
  4. Once flattened, place mini chocolate chips on top of each cookie.
  5. Bake at 350¬ļF for 10 minutes.
  6. Allow to cool fully before taking them off the pan and store in an airtight container to enjoy on-the-go!

TIP: Substitute the chocolate chips for peanut butter chips if you like more of a peanut butter taste!
