Nary a day goes by when someone doesn't ask me for a chicken recipe. Truth be told, there's plenty of things you can do with this gold-standard source of protein . . . whether or not cooking is your forte!
This chicken and avocado burrito is one of my oldie-but-goodie recipes that I just love whipping up post-workout. It delivers some clean carbs, a burst of protein, some healthy fats, and flavor like whoa. The serving size for this recipe is four tortillas, making it a great family dinner meal as well!
NOTE: Although this recipe assumes that you have cooked chicken on hand, you can also grill up or sear 2 chicken breasts for about 10 minutes and then slice them into thin strips.
INGREDIENTS
2 cups of shredded chicken
1/2 cup of Mexican cheese, mozzarella, or cheddar
1 diced avocado
2 tablespoons of chopped cilantro
4 large whole wheat tortillas
1 tablespoon of oil
DIRECTIONS
1. Mix your chicken, cheese, cilantro, and diced avocado in a medium bowl.
2. Place one tortilla on a plate and add 1/4 of the mixture. Then roll it into a burrito and repeat for all four tortillas.
3. Pour 1 tablespoon of oil into a heated pan or griddle, then put all four tortillas into the pan and cook for about 2 minutes on medium-high.
4. Flip the burritos and cook for another 2-3 minutes or until you see the tortillas turn golden brown. Serve warm with some fat-free or low-fat sour cream to garnish.
