3 INGREDIENT POWER BARS

Ingredients

  • 1 cup of the nuts of your choice (we recommend almonds)
  • 1 cup of the dried fruit of your choice (we prefer cranberries)
  • 12-15 dried, pitted dates


INSTRUCTIONS

  1. First, roast the nuts for about ten minutes at 350 F to bring out their flavor.
  2. Once the nuts are done roasting, combine with dried fruit and dates in a food processor and pulse until thoroughly mixed. (This may take three rounds of pulsing for two minutes each.)
  3. After all ingredients are incorporated, press into an 8x8 pan lined with wax paper and chill for two hours.
  4. Remove from the refrigerator, cut into bars, and enjoy!

TIP: These last for two weeks as long as they’re chilled, so this is a great recipe to add as part of your meal prep!
