SUPER EGG SALAD

Ingredients

  • 8 large hard-boiled eggs
  • 1/3 cup nonfat plain Greek yogurt
  • 2 tablespoons mayo
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon sriracha
  • paprika, to taste


INSTRUCTIONS

  1. Start by boiling eggs. (Bring a pot of water to a boil and boil eggs for ten minutes. Then, remove from heat and let cool.)
  2. Once eggs are boiled and cool, chop into small pieces and place into a large bowl.
  3. Add the remaining ingredients and mix with a wooden spoon until well combined. (Don’t over-mix or the eggs will fall apart too much.)
  4. Place mixed up egg salad on a wheat tortilla or serve with crackers and enjoy for the perfect summer lunch!
