PROTEIN BLUEBERRY CAKE

Ingredients

  • 1 cup white whole wheat flour
  • 1/2 cup garbanzo bean flour
  • 1/4 cup coconut sugar
  • 1 cup blueberries, fresh
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 4 large eggs (only 2 yolks)
  • 1 teaspoon vanilla extract
  • 1/4 cup honey
  • 2 tablespoons melted coconut oil
  • 1 cup unsweetened almond milk

    INSTRUCTIONS
  1. Preheat to 350ºF and prepare an 8×8 inch square pan.
  2. Place all dry ingredients in a large bowl and mix well. Then, combine t all wet ingredients, except for the coconut oil and blend until batter is smooth.
  3. To finish it off, add the melted coconut oil and mix again.
  4. Place batter in the pan and bake for 35 minutes. Enjoy with a scoop of vanilla ice cream on top for even more of a treat!
