• 1 cup ground oat flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • ½ cup dark chocolate chips (set aside a few more for topping!)
  • 2 large eggs
  • 2 medium bananas, mashed
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted coconut oil


  1. First, combine all dry ingredients in a medium bowl.
  2. Then, mash the bananas in a large bowl, gradually whisking in eggs and vanilla. Continue mixing until these ingredients are combined.
  3. Add in dry ingredient mixture and mix well.
  4. Once wet and dry ingredients are fully combined, add in coconut oil and continue to mix until everything is incorporated.
  5. Heat a large, prepared skillet over medium heat and pour the desired amount of batter on the pan. Leave on one side for about two minutes and then flip. Remove from heat once other side is golden brown and repeat the process with the rest of the pancakes.
  6. Serve with a few more chocolate chips sprinkled on top and voila! You have a batch of chocolate chip pancakes that you can feel good about eating!
