EGG & AVOCADO BREAKFAST BOWL

Ingredients

  • 2 eggs
  • 1 avocado
  • 7 grape tomatoes
  • 2 cups lettuce
  • 1/4 cup cooked quinoa
  • Salt and pepper to taste



INSTRUCTIONS

  1. Begin by poaching the eggs.
  2. Meanwhile, toss the salad together by mixing together the rest of the ingredients. You can even switch it up and add cranberries or other berries based on your preferences!
  3. Once the eggs are done, carefully place them on top of your salad mixture and sprinkle with salt and pepper to taste. Enjoy!
