BLUEBERRY PROTEIN PANCAKES

Ingredients

  • 1 cup white whole wheat flour
  • ½ cup vanilla protein powder
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 cups fresh blueberries
  • 1 mashed banana
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk



INSTRUCTIONS

  1. In a medium bowl, mash up the banana. Then, add in eggs, vanilla extract, and almond milk. Set side.
  2. In a larger bowl, whisk together the remaining dry ingredients. Once combined, gradually add in the bowl of wet ingredients. Combine well.
  3. Gently stir in blueberries.
  4. Pour batter into sand dollar sized circles onto prepared skillet that’s heated over medium heat. Flip after about two minutes and remove from heat once the pancakes are golden brown.
  5. Serve hot with remaining blueberries as the topping and enjoy!
